Crafted with Alegría Riojana peppers grown in the La Rioja wine region, Carolina Reaper, and Red Rioja Wine Vinegar, this sauce brings the earthy heat and fruity depth of the Ebro Valley.
Alegría Riojana grown between the vineyards across La Rioja, are fruity, mild chillies that carry the mineral intensity of the soil. The flavour is amplified with paradoxical flames of Carolina Reaper, terrifying but yet still impeccably balanced by aged Rioja Red Wine Vinegar, contributing complex acidity, oak-aged depth, and delivering a rich complexity that will elevate any roast, grilled meat, or adventurous tapa.
Splash it over chuletillas al sarmiento (tiny lamb chops grilled over vine cuttings) to honour the region’s tradition of using every part of the harvest, let it seep into grilled portobello mushrooms where the earth meets fire, drizzle it over sharp Manchego and quince paste to cut the sweetness with menace, or deploy it as the secret weapon in slow-braised beef cheeks that surrender completely after hours of simmering.
